Delicious Cinnamon Rolls in 1 Hour

Delicious Cinnamon rolls in 1 hour???
Is that possible?

Yes, it is. Nothing is more delicious that a gooey cinnamon roll topped with a wonderful glaze. Right? You know you love the smell of them when they are cooking and the wonderful taste of the cinnamon on the warm roll. I like them warm.

I found this recipe and had to give it a try.



INGREDIENTS
  • 2¾ c. all-purpose flour
  • ¼ c. sugar
  • 2 tbsp. butter
  • 1 egg
  • 1 package instant (quick rise) yeast (or 2¼ tsp.)
  • ½ c. water
  • ¼ c. whole milk
  • 1 tsp. salt

  • Filling:
  • ⅔ c. brown sugar
  • ¼ c. (½ stick) butter, room temperature
  • 1 tbsp. ground cinnamon
  • ¾ tsp. vanilla extract
  • ¼ tsp. almond extract

  • Vanilla glaze:
  • 1½ c. powdered sugar
  • ¼ c. (½ stick) butter, melted
  • 1 tsp. vanilla extract
  • 2-3 tbsp. milk
DIRECTIONS

Preheat the oven to 200 degrees.
In a large bowl or the bowl of a stand mixer, combine the flour, yeast and salt.
In a small microwave safe bowl (or glass measuring cup), combine the sugar, butter, water and milk. Heat in the microwave until the mixture is hot and the butter is almost melted (it took about 1 minute 30 seconds on HIGH in my microwave).

Gradually add the milk mixture into the flour mixture. Add the egg and mix until a soft and sticky dough forms.

If using a stand mixer, switch to the dough hook and set on the lowest mixing setting for 4 minutes or until the dough becomes elastic or knead by hand on a lightly floured surface for 3-4 minutes. Cover the dough with plastic wrap and allow it to rest on the counter for 5 minutes.
Once the dough has rested, roll it out on a lightly floured surface until it measures a 16x9 inch rectangle. Prepare the filling by combining all of the ingredients in a small mixing bowl except for the butter. Spread the butter over the top of the rolled dough, then cover with the filling. Tightly roll the dough and cut into 12 portions. I like to use dental floss for this... I also cut it in half, then fourths etc.

That way the pieces are all uniform in size (you may have a few smaller pieces from the ends, just arrange them around the larger rolls).

Place the rolls into a lightly greased 9x13 baking dish and gently press a piece of aluminum foil over top. Turn OFF your oven and place the covered rolls inside to rise for 25 minutes.Remove the rolls from the oven and turn ON your oven to 375 degrees. Once heated, remove the foil and bake the rolls for 15-18 minutes or until the centers are lightly golden brown in color.
Remove from the oven and allow to cool for a few minutes before frosting. While rolls are cooling, prepare the frosting by combining all of the ingredients in a small mixing bowl and beating by hand or with a hand mixer until smooth. Spread over the tops of the rolls.

Cinnamon Rolls

My son, the one that loves cinnamon rolls, is home sick today so I decided to make some cinnamon rolls. The rolls were done when the other boy came home from school and he ate one right away. The sick boy has not tried one yet, maybe when he is felling a bit better. I'm trying a different recipe then the one that I used last time. Check here. Try both recipes when you have time:)


The dough recipe is from Food Network



Ingredients

Dough:
  • 1/4-ounce package yeast
  • 1/2 cup warm water
  • 1/2 cup scalded milk
  • 1/4 cup sugar
  • 1/3 cup butter
  • 1 teaspoon salt
  • 1 egg
  • 3 1/2 to 4 cups all-purpose flour

Filling

  • 1/2 cup melted butter, plus more for pan
  • 3/4 cup sugar, plus more for pan
  • 2 tablespoons ground cinnamon

Glaze
The glaze recipe is from FamilyFun

  • 1 1/2 cups confectioners sugar
  • 2 1/2 tablespoons of milk or more
  • 2 tablespoons melted butter
  • a drop of vanilla

Heat oven to 200 degrees F. so the kitchen is warm and dough will rise.

In a small bowl, dissolves yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Beginning at the 15-inch side, roll up dough and pinch edge together to seal Cut into 12 to 15 slices. I used dental floss to slice the roll. I works great.

Turn the oven up and heat it to 350 degrees F.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.

(I should have used a bigger pan...)

Meanwhile, mix butter, confectioners sugar, milk and vanilla in a bowl until combined and reaches desired consistency. Spread over slightly cooled rolls. I did not use all of the glaze.

A Cinnamon Bun for My Son


My oldest son likes to eat the cinnamon buns from Tim Horton's. So I began a mission to find some recipes for homemade cinnamon buns. I told him that I would make all different recipes and we would see which one we all liked better.
I began with a recipe from familyfun.com.
This is the actual recipe for "Sweet Cinnamon Rolls". I made it on a Saturday evening and boy did it take it a very long time. The rising was quite a process. It had to rise several times during the evening.

I only had time to take a photo of the finished product because in between the rolling, kneading, rising and baking I was cooking dinner and doing laundry. So there wasn't really time to stop and take the photos.

Late Friday evening we were sitting as a family watching hockey when the cinnamon rolls were finally done baking, and the four of us all shared 1 roll. It was warm and sticky, sweet and delicious. I thought that the cinnamon and brown sugar sort of 'melted' down and it seemed like the filling dripped a little out of the rolls.

We really liked the rolls very much. It was not great for my Weight Watchers diet but really it was not that damaging. My oldest gives the rolls 2 thumbs up and my youngest son said he didn't like the 'dough' part. He is silly.
We enjoyed them and look forward to the next cinnamon roll/bun baking adventure.
