Peanut Butter Banana Cookies

My routine has been off this week with the kids home from school. So I didn't have time to take any photos of these cookies so I scanned the page from the cookbook. You get the idea.  The cookies taste fantastic.
These cookies were a total hit at work.  I bought chunky peanut butter for this recipe and everyone at home started digging into the container so I knew I had to act fast.  I made these cookies and they are really delicious.  I hope you try them.

Ingredients
3/4 cup packed brown sugar
1/2 cup butter, softened
1/4 cup chunky peanut butter
1 egg
1/2 teaspoon vanilla
3/4 cup mashed bananas (2 small)
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Frosting
1 cup powdered sugar
1/4 cup butter, softened
1 square unsweetened baking chocolate, melted and slightly cooled
1 to 2 tablespoons milk


Heat oven to 350F. Lightly grease cookie sheets. Set aside. In large mixing bowl, combine brown sugar, 1/2 cup butter, the peanut butter, egg and vanilla.  Beat at medium speed of electric mixer until light and fluffy.  Add bananas.  Beat at low speed just until combined.  Add flour, baking soda and salt.  Beat at low speed until soft dough forms.

Drop dough by heaping teaspoons 2 inched apart onto prepared cookie sheets.  Bake for 10 to 12 minutes, or until set. Cool completely.

In small mixing bowl, combine frosting ingredients.  Beat at low speed of electirc miner until smooth.  Spread frosting evenly on cookies.  Let dry completely before storing.

I almost didn't have enough frosting.  I also did not count the amount of cookies that I made.

Superbowl Cannoli Dip

I had to work for the Superbowl (as always) and we usually have a little something to snack on to make it feel like we are actually at a party.  And considering last year while I worked my brother and sister-in-law were in Dallas at the Superbowl and this year while I work my sister-in-law and her sister are at the Superbowl, I needed a pick-me-up.



Try this amazing cannoli dip.  My aunt made it for Christmas and I could not get enough.  I am limiting myself this time since I have been working out and eating less. :)  So this made a wonderful Superbowl dessert treat. 


Cannoli Dip


1/2 package of cream cheese softened
1/2 stick of butter softened
1/2 cup whole milk ricotta cheese
1/2 tsp vanilla
1/2 cup powdered sugar
1/2 to a whole bag of mini chips


Mix the first 5 ingredients together add the chips.  I used 1/2 bag.  Chill.  Serve with honey or chocolate chip or chocolate Teddy Grahams.

Cub Scout Auction Cakes 2012

Here are the Cub Scout Cake Auction Cakes for 2012.


 Here is my Bear Cub Scout working hard on his dog cake.

 We mixed melted chocolate with corn syrup and rolled it out to cut out the ears and mouth area.

Turned out pretty cute.

 They are so proud of their cakes for 2012.

Here is my Webelo Cub Scout making his last cake auction cake.  

We tried to make spaghetti and meatballs but the Wilton color that we bought said "IVORY" and we were going to use that to tint the spaghetti actually turned out to be PINK. So we tossed out the frosting and made this cow instead.



Next year we will only be making one cake because the older son is moving on to boy scouts soon.
