Super Delicious Chocolate Chip Cookies


I love to make chocolate chip cookies. Here is yet another recipe. This one is really delicious. Wait, I think that I say that every time. :) They were very tender and I had some green and red chips left from Christmas so I tossed them in too.  ENJOY





Ingredients

3/4 cup butter, softened
3/4 cup brown sugar
1/4 cup sugar
1 egg
2 tsp vanilla
2 cups flour
2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
11/2 cups chocolate chips

Directions

In a stand mixer cream butter and both sugars together until light and fluffy, about 2 minutes. Mix in the egg and vanilla. Add flour, cornstarch, baking soda and salt. Mix until everything is combined. 
Fold in the chocolate chips.
Chill the dough for 30 minutes. The longer you chill the thicker your cookies.
Preheat oven to 350 degrees.
Scoop balls of dough onto a baking sheet. Bake for 9- 11 minutes, until the edge are just golden brown. The center will appear underdone.

Let cookies cool for 5 minutes before removing to a wire rack

Light and Fluffy Pancakes


I love pancakes!! I love pancakes!! So do my kids. Now honestly I usually use Krustez chocolate chip mix to make our pancakes. I tried this recipe and it is really great. Light and fluffy. No pictures... sorry I had a rushed day. xo

Ingredients

Dry Ingredients
1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
½ teaspoon salt

mini chocolate chips :)


Wet Ingredients
1 egg
¾ cup milk {a little less or a little more is fine depending on the consistency you like}
2 tablespoons cooking oil

Instructions
In a large measuring cup, whisk together dry ingredients
Add wet ingredients and mix well
Heat griddle and spray with non-stick cooking spray
Pour batter onto hot griddle
Cook until golden brown, about 3 minutes, flip and cook other side

Note: batter makes 1½ cups - use ¼ cup for each pancake, it will make 6 large pancakes
